Fried Chambo with CHILLITOS Chilli Flakes

Ingredients and Directions

  • 01. Ingredients

    1 kg whole fish
    1 red onion, diced
    1/4 teaspoon ground black pepper
    1/2 teaspoon ground turmeric
    2-3 tablespoons Chillitos chili Flakes
    3 garlic cloves (minced)
    1 tablespoons Chillitos chili powder/Paprika
    1/4 cup vegetable oil
    Salt to taste

  • 02. Directions

    1. Clean the fish thoroughly and pat dry with paper towels. Cut a few diagonal slits into the fish on both sides.
    2. In a small bowl, mix together salt, black pepper, turmeric, garlic and Chillitos red pepper flakes
    3. Rub mixture onto the fish liberally, including in-between slits and in the cavity. Dust the fish with a light layer of corn starchor baking flour.

  • 03. Cooking

    1. Using a non-stick skillet/pot with a lid, heat vegetable oil on medium-low heat.
    2. Add fish and cover the skillet/pot with a lid.
    3. Fry for about 5 minutes on low heat.The lid will trap the heat and help cook the fish through.
    4. Flip the fish and cook the other side on low with a covered lid for another 5 minutes.
    5. Now remove the lid and slightly turn up the heat to medium high.
    6. The high heat will crisp up the skin. Fry for 1-2 minutes. Flip and fry the other side for 1-2 minutes until crispy.
    9. Serve with steamed rice, or Nsima
